Today i am sharing an authentic recipe of Peshaweri channa mewa degi pulao which is a speciality of Peshawer and a part of pashtoon cusine which is served on occations like eid,weddings and gatherings.An easy step by step recipe of degi channa pulao.easy recipe with very less ingredients.Resembles to yakhni pulao as well..
INGREDIENTS
GARAM MASALA IN WHICH THE FOLLOWING SPICES ARE INCLUDED
white cumin(safaid zeera)2 tbs
fennel seeds(saunf)1 tbs
black cardamom(bari elaichi)5-6
green cardamom(hari elaichi)7-8
bay leaves(tez pattay)3-4
cinnamon(dar cheni03 large sticks
cloves(long)8-10
black pepper(kaali mirch sabut)10-15
whole coriander(sabut dhania)1 tbs
BEEF MEAT=2 kg large pieces with bones
whole garlic cloves=8-10
Method : In a muslin cloth add 2-3 table spoon of whole garam masala and whole crushed garlic.in a pressure cooker add meat,water,salt and the pack of garam masala and cook for 45 minutes.after that discard the potli(pack) and remove the meat and stock.
FOR RICE
Sela rice=6 large cups(i take cofee mug for measuring)
(soak the rice in water for 50 minutes)
boiled chickpeas9qabuli channa)=2 cups(same cup used for rice)
black raisins(kaala mewa)=2 cups (soaked in water for 2-3 hours))
salt to taste
chinese salt 1 tsp
garam masala(ground the remaining whole masala mentioned above)=1 tbs
red chilli powde(surkh mirch)r=2 tsp
oil(tail)i=-half cup
